| 3 cucumbers, sliced |
| 3 jalapeño peppers, minced (or less, if you don't like it as spicy) |
| 1/2 bunch cilantro |
| 1 small onion, chopped |
| Dressing |
| 1/2 cup rice wine vinegar |
| 1/2 cup sugar |
| 2 teaspoons salt |
| 1 teaspoon ancho pepper, ground |
For dressing, boil ingredients together to dissolve sugar, stir. Combine salad ingredients. Pour dressing over, toss and serve.
